White Blend, "Irrévérence", Pearl Morissette - 2018

A blend of Gewürztraminer, Chardonnay, and Riesling sourced from separate vineyards around the Niagara Escarpment. This truly irreverent wine from François Morissette sees the classically Burgundian-trained winemaker go off piste. The Chardonnay is fermented and aged in foudre. Some of the Riesling and Gewürztraminer were aged on the skins in qvevri for 6 months. A portion of the remaining grapes were had noble rot, and were fermented to total dryness. This mix of classical and natural position François between these two worlds. Pair with Tourtière!
