Utopia "Eleonora" Rosé Cider - NV

This dry sparkling rosé cider is made from Belle de Boskoop and some wild apples sourced from old orchards on the Moravian-Bohemian borderlands. The apples are pressed, then the must is blended with Cabernet Franc pomace from Milan Nestarec. This ferments for one week before being aged in old oak barrels for one year before bottling. Pair with wild boar and forest berry stew.
