Her studies and experience made her fall in love with Chenin Blanc, and this Pét Nat sparkling version is a gem. It was disgorged and therefore has a clarity visually.Declassified Touraine, she chooses her own path. Pair this with scallops in butter sumac sauce.

Female Winemaker Alert!!! This bottle is superb and expertly made by the lovely Marie Thibault. Not from a winemaking family, Marie took it upon herself to learn the ropes at university before working for François Chidaine. There, she fell in love with the Chenin Blanc grape as well as biodynamic farming – both of which are showcased in this delicious bottle. Zippy and fresh with lemon zest, honeysuckle, and fresh pear on the palate - this is the perfect apéritif. The bubbles (or what we in the wine world call the mousse) are closer in pace and texture to those of a fine Champagne than those of many American Pét-Nats I’ve tried, which is to say they’re small and delicate and very fast and foamy. Like *really* foamy. Like I thought I may have left soap in my glass. But nope! It’s just great wine. Give it a try.
