Tasting Notes

Several clones of Pinot Noir were all vinified separately, and then aged for several months in French barriques. Only a small amount of SO2 was added at bottling, keeping this in line with the low invention ethos espoused by the late Taras Ochota. Amber has taken the reigns in full, and now produces these musically oriented cuvées in the style of the original project. This is a light-bodied dry red bursting with herbaceous savory aromas and a medium tannic structure. Pair with wild boar meat pies.

South Australia

South Australia is home to nearly half the country's wine production as well as the center of premium Shiraz production. It contains the Clare Valley, Barossa Valley, Eden Valley, Adelaide Hills, McLaren Vale, Padthaway, and Coonawarra regions.

Adelaide Hills

One of Australia's premier cool climate wine regions, the Adelaide Hills region is made up of a collection of sub-regions that roughly sit between the Barossa Valley in the north and McLaren Vale in the south. The high altitude and steep topography of the region exert cooling and humidifying effects, which, along with the highest rainfall in South Australia, contribute to a climate very conducive...
