The Lacourte and Godbillon families have practiced viticulture in the village of Éceuil for generations. Crafted entirely from Chardonnay grown on mid-slope vines from the Chaillots and Hautes Vignes plots, this cuvée sees as little intervention as is possible in Champagne. Fermented in large oak barrels, it sees 36 months of lees aging. The dosage is 5g/L. Pair this dry rich sparkling white with gong bao chicken.

"Only the highest quality grapes can produce a high quality wine." This philosophy that Jean-Guy Lacourte lived by during his time with Lacourte-Godbillon is now carried on by his descendants Richard Desvignes and Geraldine Lacourte. All of their work is reflective of the terroir of their 20.5 acres, which land primarily in the 1er Cru village of Écueil. All plots are pressed and vinified separately, and there's no pumping, allowing gravity to move the wine to preserve its intrinsic properties. The Chaillots-Hautes Vignes is 100% Chardonnay, which sees fermentation in oak with 36+ months on the lees. It’s easily their most structured, tension-filled cuvée. Lemon pith and saline race across the palate through streamlined acidity with hazelnut and sourdough notes providing contrast.
