The "Vatican" of Mexico might be expected to produce traditional styles of wine, however this bottling here proves the exception. A blend of Muscat and Macabeo, the grapes are crushed under foot and fermented and aged on the skins for 8 months. The wine is racked and spends a further 6 months on the lees in amphora. It is bottled entirely unsulphured, and has a wild character that just might lead you down the road to temptation. Pair with enchiladas mineras.
