Gabriel Dvoskin chose the most southern climes of the Uco Valley, considered by many too cold for viticulture, to start his winery. This microclimate has a unique soil composition of 3 separate sedimentary layers that intrigued him. The Pinot Noir that he grows here has the hallmarks of cool climate winemaking. Fresh, light-bodied, with restrained red fruit, and good acidity, the wine is aged in used French oak. Pair with humitas and dried beef.
