After exploring the amber wines of Georgia, and falling in love with the craftsmanship and authenticity of qvevri aging, we are led here. Mtsvivani Kakhuri has become an incredibly rare grape due to disease, so we are lucky to see any of it at all. Not for the faint of heart, this is a deep and mysterious wine; one that takes time to befriend yet one that is at the pinnacle of Georgian wine. A full 12 months of aging in qvevri leads to an incredibly colorful and textured wine, bringing together so many whimsical flavors with a savory backbone that begs to be paired with the flavors of Georgian cuisine. The depth of this wine lends well to heartier dishes with meat and herbs, such as chakapuli, which is a lamb stew with tarragon in a sour plum and white wine broth. Delicious!
