From the easternmost of the Canary Islands, Lanzarote, the wild volcanic vineyards here are an inhospitable place for viticulture. The resulting grapes have intense concentration, and yield superb wines. This Méthode Champenoise-style dry rosé spends 15 months on the lees, and has Malvasia added at bottling in lieu of sugar, and no dosage. Pair with fried fish and mojo.
