A still, red wine made of 1er Cru Pinot Noir from the village of Chamery, this is the type of wine made in Champagne before sparkling wines became dominant. Half whole cluster fermentation, with 3 weeks on the skins, and then 10 months were spent in oak casks. No SO2 was added. Pair this dry red with salmon braised in shoyu.
