Here, in this very special bottle, is everything I love about Cognac. Rémy-Martin, though one of the largest producers here, is also one of the most quality-conscious. Their history dates back to 1724, and in 1738 the sheer quality of their Cognac was so high that "Louis XV granted Rémy Martin the exceptional right to plant new vines, despite his 1731 ban on new plantings in the region." Their XO is remarkably pristine. On the nose, dried peaches and pears mingle alongside notes of caramel and marshmallow. The palate is velvety, with white flowers up front, fresh Alsatian mirabelles on mid-palate, and a finish filled with jasmine, maple, and fresh green figs.
