This single-estate tequila is named for the birthplace of the grandfather of the makers of this tequila.The location here has deep red soil and is at an elevation of 2,074 meters. There are dark chocolate and berry fruits shown. This vintage shows a bit more cinnamon than the previous one.

Ocho is my favorite Tequila producer because they talk about agave the way I talk about wine. Every bottle is not only estate- and village-specific, but vintage dated, hand-harvested, and never chill filtered. The piñas grow at the La Latilla estate, a classic Highlands terroir of red oxide and clay, on eastern facing slopes with full sun exposure. Some Tequila fans will tell you that they only drink unaged tequila; oak masks the unique flavors. I'm one of them. But hold this bottle up to the light. You'll see the Ocho añejo is paler than most people's reposado. The spirit matures, but in old oak to keep the flavor intact. The palate is fresh and grassy, with pineapples and caramel cider apples. That mingles with cinnamon, coffee grounds, and red fruits. Each new release is unique, exciting, limited. But never anything but delicious.
