After a long hiatus Suze is finally available in the USA! Bright yellow and slightly bitter Suze is typically drink as an aperitif on the rocks or mixed with soda and a twist.
Does your bar need Suze? Suze is a gentian-based aperitif that you can treat like an herbaceous Campari. It's not quite as sweet or syrupy as the Italian stalwart. The nose is unusually fresh, verdant, and floral for an aperitif liqueur and the finish will forever remind me of bitter lettuce, like endive. If all of that sounds good to you, you might enjoy a Suze on the rocks, which would allow you to appreciate the radioactive green-yellow color. Suze is also a frequent component in the white negroni, a cocktail with many different recipes to its name. I like mine with dry vermouth and a pine-y gin. The more daring among us could try a combination with mezcal or raspberry brandy.
