What a wonderful aperitif Pommeau is! Hailing from Normandy, this three part fresh cider apple juice and one part Calvados mixture that's aged in oak is a pleasant delight, being formerly guarded by the farmers who produced it. Now in the hands of premier estates, the heights this distinct creation can reach are endless. Regularly, the appellation requires aging for a minimum of 14 months but Christian Drouin is far from a regular man, choosing to age it for up to 3-4 years to offer more balance in its alcohol presence and soften the flavors. Flavors of cinnamon sticks, warm honey, vanilla, and star anise provide good complexity to this exuberant, perfumed apple aperitif that would pair well with many a dessert.
