Very floral with additional notes of black licorice, bubble gum, coconut flesh, and banana cream. After a few minutes of air, hints of spice pleasantly appear and follow on the palate with a tongue-tingling effect.

Imagine yourself in a feathery field of fennel bulbs, dill, and scattered flowers. For the anise fan who has yet to experience it, Varnelli's is truly distinctive for showing off the flavor of green anise seed rather than star anise. If you are used to the rather oily and intense flavor of pastis or absinthe, you will find this version much fresher with a distinctive green taste. It is a lot like chewing on a candy-coated fennel seed. Dry by comparison to other anisettes, this would be fantastic in a cup of strong coffee or sprinkled over fresh donuts.

This region lies on Italy’s Adriatic Coast, so much of its cuisine is seafood-based. Marches is best-known for its white wines. Verdicchio produced near the towns of Jesi and Matelica often has gently bitter notes and rich fruit, and is an excellent match for many seafood dishes.
