Tasting Notes

Baijiu is one of the oldest and most consumed spirits in the world. In fact, there is increasingly strong evidence that modern distilling culture has descended from ancient Chinese practices. Yet this old, sacred liquid remains undiscovered in the West. The creators of Hong Kong Baijiu are working hard to rectify that. Hailing from a top-notch distillery tucked away in Sichuan Province, the spirit is nothing like some of the more funky, rougher alcohol you may have run into but instead is refined, very well-balanced and easy-drinking without losing its fiery nature. Notes include multicolored licorice, sweet and sour candies, dried citrus fruits, fresh pears, cinnamon stick, and grass.

Baijiu is the national spirit of China, but you've probably never heard of it. Or maybe you had this fire water once and swore never to consume it again. Hong Kong Baijiu is the most refined and palatable Baijiu I have ever tried. Baijiu has been around for more than 1,000 years and is distilled from sorghum, rice, wheat, and barley. The firery spirit reminds me of white whiskey or moonshine in some ways, but with much more pungent, complex flavors of citrus, licorice, spices, and fruit flavors, and definitely has a kick to it. A classic Chinese celebratory drink, but don't shoot it! Sip it and let the flavors and the heat evolve on your palate. HKB works well with infusions and adventurous cocktail recipes.
