Stylistically somewhere in-between Suze and amaro this golden liqueur evokes the spirit of the deep woods and famous German forests. The complex recipe list includes gentian root, juniper, angelica root, clove, lemon balm, cinnamon bark, orange peel and more. The spirit features notes of yellow apples, lemons, candle wax and lavender honey with a rich mouth-coating texture and lingering bittersweet finish.

After a night of imbibing creatively crafted cocktails at Maison Premiere in Williamsburg, Brooklyn and chatting with the bartender, he gave me a small pour of this beautiful German liqueur and I was absolutely smitten with this nectar. A collaboration born between the proprietors of the Michelberger Hotel, Gerald Schroff, and Ulf Stahl, this is a resurrection of Preussishe Spirituosen Manufaktur, the last distillery of its kind in the city of Berlin. The Forest is an amaro-like spirit, using a neutral sugar beet base spirit that incorporates botanicals such as gentian root, vanilla, lemon balm, orange peel, and star anise that ages in earthen pots for a minimum of 3 months. Bright and softly sweet, like caramel cubes with twists of citrus, clove, toffee, and nougat that makes the perfect digestif to make a great night that much better.
