Tasting Notes

An authentic recreation of one of few styles of popular spirits that pre-date even the founding of the country. Since the early 18th century, this far corner of the Hamptons was a major commercial center for commerce and sailing. The whalers were known to store their precious rum rations in used barrel that had previously held dry provisions like spices and fruits. For this release, the rum was aged in used bourbon barrels and infused with a proprietary blend that includes vanilla, ginger, fruits and more. Notes include lightly roasted coffee beans, vanilla, dried apricots, dried cherries, sarsaparilla and chocolate wafers. But make no mistake, this rum is more dry, spicy and exotic and sweet confection aided in no small part by the high proof and natural ingredients. A great effort that is loads of fun to drink.

I was astounded by how dry this rum is. There is absolutely zero added sugar, yet it shows so much richness and complexity on the palate. This tasty, local treat is an homage to the types of rums in Revolutionary era America. They were kept and shipped in barrels that held fruits, spices, coffee and other spirits, all of which would influence the flavor. Sag Habor takes it a step further by aging in Bourbon barrel, then infusing with vanilla and baking spices. Fresh fruit, spices and herbal notes are are all on display and is a terrific weapon in a mixologist's arsenal. The cocktail opportunities are endless.
