Tasting Notes

The second release from this excellent recently revived distillery is further proof that when enough attention to detail is paid to every step of production, ultimately age, is just a number. Slow fermented for over seventy hours and distilled in small copper pot stills the whisky was laid down to mature in a triple threat of 40% second fill peated Islay quarter casks, 40% first fill bourbon barrels and 20% first fill oloroso sherry casks. The impact of the sherry is immediate leading the way with notes of dried fruits and roasted nuts while the layers of smoke and vanilla from the other casks round of the core of rich malt flavors wonderfully. An absolute delight to drink now, no question about it the team up at Caithness are up to big things. Bottled non-chill filtered.
