Tasting Notes

First created on a dare by his close friend, David Kyrejko created Arcane distilling at first to re-create Fernet Branca but ended up taking the road less traveled in his experiments which lead him to this. A gorgeous bitter made with a base of New York State grain set off off a mixture of herbs and botanicals that include gentian. licorice root and various hops that are both vacuum distilled and infused. Notes include a generous dose of peppermint that gives way gradually to flavors of caramel, brown butter, gentian, oolong tea and root beer.

This bottle is the result of a dare... Arcane's distiller and engineer Dave Kyrejko started out making hopped whiskey by distilling beer made by local breweries. Turns out he designed and built his own system based on the idea of vacuum distillation. His stuff is so good, even with out aging, because this distillation technique gets rid of many of the impurities that come through using traditional methods. A few years back a friend dared him to make something that "took talent" as opposed to distilling other people's beer recipes. Dave took up the challenge and, in my opinion, knocked it out of the park with this Fernet. The result is a drink that has all the herbal intensity and stomach southing qualities of your average Fernet but without the harshness and the shiver I always get after taking a shot.
