Tepache is a beloved and ubiquitous fermented beverage in Mexico made from the fermented rinds of pineapples and the addition of cinnamon and brown sugar. The team at Bittermens has made the first ever high proof version clocking in at a clean 40% ABV. The flavors stay true with notes of gingerbread, tropical fruit and pepper. An excellent cocktail ingredient.

Tepache is a traditional fermented beverage from Mexico, made with pineapple rind, sweetened with whole cane sugar and spiced with cinnamon. It's typically a low alcohol drink with a very short shelf-life, but Bittermen's have upped the ante and the alcohol, turning it into an 80 proof liqueur. So what does it taste like? If you grew up in a Scandinavian household, or have been to the packaged food section of Ikea, you may be familiar with Pepparkakor - a delightful ginger cookie usually prepared around the holidays. The ginger, clove, cinnamon and nutmeg explode out of the glass and linger for what feels like hours on the palate. The tropical pineapple is subtle, bringing a bright note to the drink. I can't wait to try this in some Tiki inspired cocktails. Could this be the new Allspice Dram?
