While Pellehaut is a thoroughly modern operation, there is evidence of wine being made here since ancient Roman times and to this day this is a family run enterprise centered around traditional Gascon farming. This vintage release was made from 100% Folle Blanche, the old traditional grape variety of the region now scarce, aged in a combination of local oak fashioned from trees that grew on the estate as well as Limousin casks for 17 years. Bottled undiluted at a natural strength of 49.7% ABV, the brandy combines the elegant character of Folle Blanche with the assertiveness of full proof spirits. Notes include chocolate covered hazelnuts, fig preserves, hibiscus tea, preserved lemon and oak spices.
