Tasting Notes

We have been impressed again and again and have fully embraced the very special rice based whiskies from Japan. In their own way more uniquely Japanese, this spirits beguile the senses with their familiarity and exoticness. This release was bottled from a single cask at full proof after aging for ten years in an ex-sherry cask. The opening notes remind us of extra old Armagnac with a deep oak profile surrounding a core of dried fruits. But with some time in the glass more complex notes of oolong tea, passion fruit and water chestnuts turn this into something really special.

By now, Japanese whisky doesn't need a hype man. But the craze is focused on one or two large producers, who are for the most part doing their best to imitate Scotch. I invite you to try something that is truly special instead. The Ohishi distillery dates to 1872, and their specialty is distilling not grain or malt, but rice. A mix of malted and unmalted rice, including local gohyakumanishi rice the distillery grows themselves, is the base here. The texture is unlike any spirit you've had before: ethereal, delicate, almost a whisper. But the flavors are robust, layered, and unmistakable; one of the most pure sherried whiskies I've ever tried. The palate is loaded with marzipan, toasted nuts, baking chocolate, dried fruits and burnt citrus, with floral notes and oak spices lifting up out of the glass. Like a full proof Amontillado!
