Tasting Notes

Made entirely from Kentucky grown grains sourced from a single farm the Heritage rye makes up 56% of the mash here with corn 33% and malted barley 11% filling out the bill. Aged in an air dried Char #4 53 gallon barrel the whiskey was bottled as a single barrel at full proof after 4yrs. Notes on dill and savoury herbs and pepper wake up the senses and after a bit of the alcohol blows off the whiskey gains concentration and settles into some gorgeous sweeter flavors of pecan pie, grilled peaches, apricots and vanilla. A few drops of water do this whiskey well. We also love it on the rocks and of course Old Fashioneds are a no brainer for this one.

American oak frequently provides notes of vanilla, baking spice, coconut & even dill. I don't always detect the dill in whiskies as much as I notice it in American oak-aged wines, but it's one of the first things I noticed about this rye, and I LOVE IT. This is one of three whiskies recently released by partners Shane Baker and Patrick Heist, who worked for many years as distillery consultants & take a scientific approach to making their own spirits. A couple of points make this rye a real standout among its peers on the shelf - the fact that no chemical are used in the distillery and their adherence to sweet mash, rather than sour. This is soft and approachable, but also really complex. This is an outstanding spirit for the price. Buy it now before it goes the way of so many other U.S. spirits - more expensive & hard to find.
