Tobalá is a wild form of agave that grows only in high elevations with shaded protection. Its hearts are much smaller than the more commonly found Espadin, with a high starch content.
Felipe and Ageo Cortes kindly bottle this tobalá for consumers, but this is a rendition unlike most others. Using the most traditional of production methods they coax a somewhat different flavor profile. Butter, smoked pineapple, minerals, limoo omani, stewed herbs, and french fries all mingle together on the nose and palate.
Truly special mezcal may be best rewarded paired with some introspection. This is one to sit down with and contemplate, just you and this tobalá in a copita.
