Wilderness Trail Wheated Kentucky Bourbon

We have a few hundred American whiskies on the shelf right now, but I'd like you to consider this one. Most new labels in domestic whiskey are not distilleries. They buy an existing distillery's spirit, then handle the business and marketing first and foremost. Wilderness Trail, right off the bat, runs their own distillery. It's a project of Shane Baker and Pat Heist who, for most of their careers, were not distillers themselves but biochemists. Specifically: industry-leading experts in the field of fermentation for more than 20 years. Their whiskies are always a new, sweet mash fermentation (as opposed to the sour mash style where the last batch is used to kickstart a new one, like sourdough). Each batch is different, but the wheated series, is always a gorgeously soft, honeyed style that hits notes of autumn spice and cracked pepper.
