Bitters are often described as the seasoning of the spirit world. With the range of flavors these days, it's a veritable spice rack. The newest addition to our shelves are Japan's first-ever bitters. The lineup comes from Yuki Yamazaki, a veteran bartender, who makes all of these in small batches at a facility in Tokyo’s Chiba prefecture, but sources his ingredients from all over Japan. Umami is one of Japanese cuisine's signature flavors and in bitters form it's a powerhouse of flavor. You'll find kelp, bonito flakes, and dried shiitake mushrooms with a hint of yuzu. It brings an earthiness to any savory cocktail and works to enhance a cocktail’s flavors not unlike salt in cooking. The possibilities are endless.
