From one of the great independent distillers of the world, this base rum was made in the traditional pre-industrial method with hand harvested native cane, wild fermentations and pot distillation to proof. This rum went the extra step of 16 months aging on the island exclusively in a very rare ex-Caroni rum cask prior to being bottled for us at cask strength. A jewel of a rum. Available in very limited quantities. The profile of the rum has an underbelly of smoky earth, spices and overtones of preserved lemons, dragon fruit and sorrel tea.
One of my favorite aspects of this business is my very fortunate exposure to so many special and tasty products. Every vintage or artisanal distillation yields a unique essence that won't be duplicated exactly ever again. Natural factors and human choices meld into tiny miracles bottled for our fleeting enjoyment. Take this Clairin for instance. Captured here are notes of wildflower honey, tropical fruit, nectarine, and apricot. Barrel age provides mild hints of cinnamon, nutmeg, and vanilla. An earthy quality delicately threads through this spirit as well. One need not be a connoisseur to relish something so extraordinary in its seeming simplicity. And the most exciting thing? The next bottling will be slightly different. I can't wait to do this all over again...
