Using a blend of table and dessert apples from the Hudson Valley's Indian Ladder Farm Cidery, the wild fermented harvest was then double distilled in copper pot stills and aged in an ex-Laphroaig Single Malt Scotch Cask. The apple notes are bright and distinctive in the foreground with hints of caramel and spices. The smoky, peaty cask influence is well-integrated and brings to mind a damp batch of forest floor after an autumn rain. Bottled at 100 proof. Available in limited quantities.
