Dating back to at least 1765, Saint James is one of the most historic brands in the world and continues to make traditional agricole styles rhums to this day on the volcanic Caribbean island of Martinique. The Paille expression, a reference to the "straw" color of this aged rum, is like a vsop or sous bois style, a gentle brief period of aging that retains plenty of fresh cane and herbal flavors of the original spirit with a roundness and additional flavors of vanilla and spices gained from the time in oak. A very versatile spirit.
