Starward Astor Single Barrel Australian Single Malt Whisky

Item # 43777 750mL

Our second exclusive single barrel selection from this stellar Aussie distiller was aged in an ex Red Wine barrique from the Barossa Valley before being finished in a new charred American Oak Hogshead prior to bottling at a natural cask strength of 55.7% abv. Distilled in January 2016 and bottled in June 2020, this is one of the older whiskies from Starward we've seen to date and the bit of extra time and secondary aging really shows in the finished whisky. On last tasting we found notes of honey nut cake, dates, molasses, apples, caramel and spices with a finish of toasted oak and a pop of tannins.

Staff Pick Notes

At a store like Astor, we often do barrel picks and limited collaborations with some of the best distilleries from all over the world. What's rarer is when we go back to one of them and say: this was so good, we're gonna make it a series. This is our second red wine aged single barrel from Aussie distiller Starward, bottled at cask strength. It's one of the most interesting bottles on our shelf. The aging regiment is a fun inversion of a typical wine cask finished spirit. This was actually fully matured in an ex-Barossa Valley red cask before being briefly finished in charred American Oak hogshead (usually it's the other way around). Full bodied, viscous, and long on the palate, each sip is a journey. The aromas run from ripened dates, wine grapes, and vanilla to Christmas spice, sourdough, wild mint, and even marzipan.

Glossary

Australia

Australian Shiraz (made from the grape called “Syrah” in other parts of the world) shows the essence of the outback: it’s big, bold, and a little rough around the edges. The vast country leaves lots of room for variation, however, with its many terroirs each yielding distinctively styled wines. The climate of South Australia’s McLaren Vale district is heavily influenced by the ocean; wines here typically show savory notes of olive and spice on the nose and deep berry flavors on the palate....

Victoria

The state of Victoria, adjacent to and southeast of South Australia, is Australia’s third-largest producer of wine. Climatically very varied (its higher-altitude vineyards are the coolest in Australia), Victoria is home to the most diverse assortment of vineyards in Australia, with a particular focus on cooler-climate varieties such as Pinot Noir and Chardonnay. Shiraz production tends to be concentrated in the central viticultural regions of Grampians, Pyrenees, and Heathcote, where the...
