We've been patiently awaiting the Stateside release of the whiskies from Stauning. What started as a private, very small personal passion project among friends and fellow whisky enthusiasts, is quickly transforming into one of the most important new whisky distilleries in the world. Located in Denmark, prime country for grain, and slow careful aging, of the whiskies coming out for now, smoke is the rarest. Created from local malted barley grains that are floor malted at the distiller and are smoked with local sources of heather and peat prior to being distilled and aged. The whisky is light on its feet but peppered with a wide range of flavors that run the spectrum from lemongrass to preserved citrus to raw honey, tobacco roasted nuts and baking spices.

A true study of terroir, Stauning Whisky is located on the far western coast of Denmark, and every ingredient is sourced within 3 km of the distillery! Through in-house floor maltings and direct fire heating of pot stills (no steam coils here), we are treated to an explosion of barley flavor that has all but disappeared from today’s whiskies. These practices were all but abandoned due to the intensive labor involved, but do they ever make a difference in flavor! The barley has such a vibrant fruitiness and nuttiness that is balanced with the addition of local peat and heather, adding a characteristic smokiness that is both savory and floral. Not only is this whisky a true taste of Denmark, it is a taste of the way whisky used to (and should) be made. What started in 2005 as a hobby for 9 friends has become a bellwether of whisky today!
