This grain to glass independent distiller is making exceptional whisky while still flying under the radar making it a perfect time to get acquanited before their small batch spirits become harder to get. Made from 100% local barely that is traditionally manually floor malted per batch for them to their specs and then distilled in their custom hand forged Forsyths pot stills, the spirit than ages in a combination of American and Spanish casks of different size that have been seasoned with either oloroso sherry or Pedro Ximenez sherry. Bottled with no color added and no chill-filtration at natural cask strength for full flavor. The whisky is very expressive, intensely aromatic and fruit driven with accents of spice and a silken texture. Very impressive stuff.
Nickolas Franchino, Head of Production at Cotswolds Distillery, says “good sherry casks give rich, fruity, spicy, and nutty flavours that marry perfectly with the underlying malt character and are a joy to savour.” This single malt is made from 100% locally grown barley from the Cotswolds then traditionally malted at Warminster, Britain's oldest, working malting facility. The barley is mashed and fermented before being distilled twice in copper-pot stills. The whiskey is then matured in a combination of American and Spanish oak hogsheads and butts seasoned with Oloroso and Pedro Ximénez sherry. The resulting whisky is smooth and complex with notes of Christmas pudding, candied ginger, Bergamot, almonds, brown sugar, and clove-studded orange peel.
