Sougen (or Sogen) Saké Brewery was founded in 1768. Water flows down from the forested Kurofumi Mountains to the picturesque Noto Peninsula. This soft water begs to be use for saké brewing, contributing to the unique, round palate of Sougen brews. Delicate flavors of rice and caramel characterize the nose. The beguiling palate is soft and mellow, straddling the difference between density and daintiness. An umami richness follows. This junmai drinks with ease on its own, and would pair marvelously with steamed asparagus, salmon with a caramelized crust, or oysters on the half shell, garnished with dried seaweed.
