Sawanoi "Kiokeijikomi Iroha" Saké, Kimoto Junmai

This comes from Tokyo and was fermented and aged in large cedar casks. This adds a great deal of spice on the palate, thyme and white peppercorns. Made in the Kimoto method, meaning that no lactic acid was added to the brew. The pale yellow color is due to the aging vessel. Just off-dry.

Sometimes being very refined is highly overrated. And living in the hectic hustle and bustle of NYC, there is also a lot to be said for longevity. Sawanoi has been making premium sake astoundingly for over 300 years! Eschewing mass production methods, this sake is made almost entirely by hand and fermented in traditional cedar barrels that are an average of 200yrs old themselves. Fresh and fruity on the nose, the flavors on the palate are rich with a beautiful assortment of perfectly ripe bananas, and pears.Along with a dose of fresh acidity the cedar adds a welcome spicy character that mingles and flirts with the fruit on the tongue. This bottle can prove that sake should not just be an alternative or resort but a primary love in your life. Don’t be fooled by the lowly Junmai classification, this is sake of the highest order.
