Also known as the Demon Slayer, Wakatake Onikoroshi is a great introduction to the world of Junmai saké. The category is considered a pure rice style, requiring neither a minimum amount of rice to be polished away, nor the addition of alcohol after being brewed. If you are unsure of how to drink saké, this particular bottle can be enjoyed chilled or warm. Experiments are encouraged to see what you appreciate most. I find this saké quite elegant & refreshing when consumed on the cooler end of the spectrum, but as it warms to room temperature, notes of anise and a richer mouth feel develop. Feel free to pair with raw and lighter cooked dishes, though the unique minerality will work with some fried foods as well.
