Daiginjo has the reputation of being pretty and aromatic and precious but Ginban Banshu's is an exercise in the pleasures of austerity. When people talk about the highest tier of sake quality, it's hard to convey what that means, but it shows here without being about flavor. The sensation of drinking this is somewhat shocking. It evokes the plainer qualities of a lowly junmai while surfing on the elegant body you expect from this level. The texture is present in your mouth, but also not. Like a mineral water concentrate, this is a palate cleanser par excellence. The relatively neutral flavor makes it work with so many foods, but I think this would be absolutely perfect with sushi.
