Hattanso is an heirloom rice varietal that was revived by female Toji, Miho Imada. No one had used this rice for 300 years, but now it is being exclusively grown for the Fukucho brewery. The sake has a delicious rice flavor and incredibly smooth texture. Excellent match with oysters.

As one of few female Tojis, her passion and dedication are unmatched, inspiring more female Tojis to join the field. Miho-san is known for creating her own hybrid yeast starter and for experimental brewing with white koji. For this saké in particular, she revived a local heirloom rice known as Hattanso. Miho-san worked for 10 years to learn how to grow and brew Hattanso. This Junmai is a full expression of the grain, with robust earthy and mineral notes, and a viscous, oily texture. Miho-san polishes the rice less than other Junmais, believing that it results in the best display of flavor, balance, and complexity. Mastery of one’s craft is something that won't be forgotten!
