Miho Imada is one of Hiroshima's foremost sake brewers, and also one of the few female ones. A third generation Toji, she is crafting exceptional sake that tastes of emotion. Before being called home to return to the brewery where she grew up, she led a life in Tokyo working in Noh theater. This intensely traditional and rigid form of performance has clearly impacted her dedication to the craft of sake brewing. You can taste the storytelling in this Moon on the Water Namazake. With temporality and timed performance in mind, this sake is only available for special spring release. Floral, rich, opulent and intensely delicious, this is some seriously crafted, unpasteurized, seasonal sake. Drink up before the final bow.
