At the very southern point of Japan's main island, in the city of Ube, lies Nagayamahonke Shuzo, the home of Taka brewery. The estate has been producing sake continuously for over 130 years and is now in the hands of 4th generation Toji Takashiro Nagayama. "Taka" is the first character of Takahiro-san's name and means "noble." This sake is fine and focused in flavor but truly mouthwatering in it's perfect balance of ripeness and acidity. In the glass, it truly harkens to the style of Mersault in Burgundy, which should be no surprise as President/Toji Takashiro-san studied there under the guidance of Philippe Pacalet. With subtle notes of green melon, pineapple and eucalyptus; delicately chill and treat this exquisite sake as you would treat any fine white wine.
