Vin de Savoie "Abymes," Dom. Labbé - 2022

Strip away the barrels, ripe fruit, and sorcery, and you're left with something like this. Abymes is a paragon of white wine, one that I think most drinkers will enjoy quite a bit. For one, it's supremely refreshing—pristine and clean like sticking your tongue out in the snow. What keeps this wine compelling is the interplay of salinity and acidity. You could also call it chalky; chalky like Chablis, chalky like crisp Champagne, and if you don't have experience with either of those then think about a roll of smarties—just the white ones... a kind of clean, tangy, and cleansing experience. It's great to have a solid wine at this price. I always have a bottle around, if not for drinking as is, it makes a great base for mixing with fruity cordials and ice.
