This unusual spirit is an eau de vie (brandy based) that is infused with the buds of Douglas fir trees and then redistilled. After that distillation, it is again re-infused with more buds. No artificial colors or flavors are added, it is simply green from the buds themselves.
Clear Creek Distillery has been at the fore of the now very popular craft distilling movement since the beginning. Everything produced there has the common thread of authenticity and balance. To produce this replica of the legendary Alsatian eau de vie, the team starts by picking young, fresh, green buds and immediately dumping them into buckets of their brandy to begin maceration and prevent oxidation. This concoction is distilled and then re-infused with more young buds to add intensity as well as freshness. Everything is then strained and finally a bit of their pear brandy is added. The result is a spirit with delicate texture, clear fruit flavors, and complexly layered, nuanced elements of mint, eucalyptus, rosemary, thyme, and menthol. Excellent as a digestif or in myriad cocktails, especially with gin. A clear stand-out.
