Perhaps the most famous of the widely acclaimed Reisetbauer eau de vies, this is distilled from 100% carrot grown by a local farmer. Using nearly 50 pounds of the vegetables to produce one of these bottles, the result is a concentrated spirit that sings with aromas and flavors of glazed carrots, wet earth, and ripe stone fruits.

I know this bottle looks weird. Most people these days don't drink eau de vie, period, let alone one from root vegetables. But I'm not exaggerating when I say it's one of the best spirits we carry. How did a carrot distillate even come about? A neighboring farmer was stuck with excess "ugly" carrots he couldn't sell at market, but Hans saw opportunity. Of course, there are further difficulties. Fruit is easy to distill. Yeast turns sugar into alcohol, and fruit has plenty of that. Grains can be malted in order to convert starches into sugars. But carrots? It takes on average 35 kg, or 77 lbs, of raw material to make one liter of this elixir. You taste roasted carrots, and raw carrots, yes, with the sweet earth still clinging to the leaves right off the farm. A flavor like hazelnut comes in on the palate, and rich vanilla cream.
