Tasting Notes

Pair this refined Champagne with lobster, oyster, or any seafood. A serious Champagne with expressive aromas and intense flavors of green apple, chalk, white tea, and salinity on the finish. A small, family-run estate located in the premier village of Cumières. Georges's approach is meticulous and detail-oriented, and all of his wines have great focus and great personality. Worth keeping in the cellar for several years.

Staff Pick Notes

Do you, like me, think it's hard to go wrong with Champagne? Or does this logic undermine the art of choosing a top-notch bottle? Maybe, so I'll share with you the secret of Georges Laval Champagne. Exceeding any rigorous, if vague, parameters for "high quality" bubbly, Vincent took over his father's operation of growing, hand-riddling, and hand-bottling Champagne in 1996. Small production is an understatement--every bottle passes Vincent's hands. He keeps an eye on his neighbors' land so pesticides play no role in his organically tended vineyard. His brut nature effuses lemon chess, fresh brioche, and apple orchard. The palate is malic and pointed, but not annoyingly sharp. Spending time with the wine reveals gentle hazelnut and unfolding complexity. As you pour a glass say "enchanté." You are shaking hands with Vincent of Cumières.

Terroir,...

Champagne

Champagne is finally getting the recognition it deserves as a brilliant food wine. For consistency and quality, turn to the big Champagne brands and you’ll never go wrong. Remember that “Non-Vintage” (NV) is not a dirty word here: NV Champagnes are blends of wines from the best growing seasons. But if you can find one, try a Champagne made by a Grower-Producer. These winemakers control every...

Chardonnay

From Champagne to Chablis, it's hard (not to mention unpleasant) to avoid this famous white variety. During a huge popularity surge beginning in the late 1980s, Chardonnay plantings have increased dramatically -- not only in California's wine country, with which the variety is nearly synonymous, but also in Burgundy (its original, Old World home) and just about everywhere else in the winemaking...
