Vouvray all day! That is how the slogan really goes. Forget rose, forget gamay, Chenin Blanc is the queen regnant of today. Its jealous Loire stepsister Sauvignon Blanc is being punished cleaning the litter box and mowing the lawn, and Chenin Blanc is getting ready for her debutante ball. This beautiful wine has notes of honey, peaches, white pepper, racing acidity, and a touch of residual sugar. From the oldest of Pinon's vines, grown on limestone soils, this wine is fermented in old wooden vats with native yeasts. Fermentation is arrested naturally by the cold, resulting in the kiss of sweetness that really makes this wine go up to 11. Great for a cool autumn day, cold winter night, and is fantastic with spiced dishes and creamy cheeses.
