Tasting Notes

This sparkling rosé is made from 90% Cabernet Sauvignon and 10% Petit Manseng. Bled Cabernet Sauvignon grapes from the younger Daumas Gassac vineyards. The “free-run” grape juice is fermented in a closed tank so as to retain all the fermenting gas. Aged 3 to 4 months in closed stainless steel tank.

Natural wines need not taste like kombucha! They can be fresh, fruity, juicy, and clean. Mas de Daumas was making natural wine way before it was cool- in the 1970s! They sourced cuttings of different varietals from all over Europe and even Jerusalem. Then, they went back and planted the vines in-between the trees on their estate. They made sure not to disrupt the forest surrounding their home, and now the forest helps to protects their vines. They use no fertilizers or chemicals. No yeast is added to any of their wines. For this frizant, they co-ferment everything in a tank that is sealed shut. Nothing is added or taken away; no fining, filtering, or sulfur. What emerges is a pure, natural delight.
