Tasting Notes

Apolonio Ramírez manually produces his mezcals in the commune of San Agustin Amatengo. At an altitude of 1360 meters his agave plants are crushed by an oxe drawn tahona and a rare single distillation with a copper plate refiner takes the place of more standard pot stills. All of his mezcals carry the signature of his methods and are unmistakable when you encounter them. This Barril, bottled at a natural strength of 53% ABV is one of the most complete spirits from this agave you are likely to encounter. Created from plants grown a minimum of 10-15 years the mezcal is powerful and concentrated from start to finish. The aromas are tightly wound slowly giving off notes of sweet carmelized shallolts, burlap, lemon balm and garam masala. The palate changes gears and suddenly the flavors turn to dried chiles and pepper with an expansive finish that blows the lid off of this mezcal with a flourish of poached pears, apples and quince.
