Saké might be the solution to all of the famously difficult wine pairings: fresh greens, sour vegetables, and spicy foods, to name a few. The thing is, saké at the premium level is spendy stuff, and it's hard to justify that expense sometimes when, for a similar price, you can buy a wine that seems like a sure bet. Tanuki is a good place to start. I like this saké for its utility. It makes drinking saké normal. I've served it at parties where we grilled pieces of chicken on a stick with soy sauce, and I have a carton hanging out in my fridge to have as a random aperitif or with my next order from King of Tandoor. The flavor is mild, a little bit saline-sweet, and grainy, which makes it a good backdrop to a wide spectrum of dishes.
