Tasting Notes

Coppersea is a true farm distillery situated in the historic rolling hills of New York's Hudson River Valley. Virtually all of the production for their spirits are done in house including growing nearly all of their own grains on-site at the farm. This category breaking bourbon is also the first of its kind that was aged exclusively in new barrels fashioned from local New York Oak. After aging for over a year the whiskey is fruity, spicy and robust with decadent notes of french toast, peach rings, vanilla, black pepper, mandarin orange, coconut cake, milk chocolate, rooibos tea and cedar.

I'm loving this new expression from super small batch distillery Coppersea! This is true grain to glass distilling and as pure New York as you can get. All grains are 100 percent Hudson Valley corn, rye and barley. Literally hand raked and floor malted by Chief Distiller Christopher Briar Williams and then aged at least one year in 100% New York White Oak. The nose reveals stone fruits like peaches and plums, caramel, creme brûlée, fresh cut wood and black pepper. On the palate the peaches carry through along with notes of genmaicha tea, toasted grain and vanilla. To be honest I couldn't put down the glass. I wanted to keep smelling and tasting. The terroir is so prevalent in this whiskey that it's like hiking through an upstate New York forest! Excelsior is super limited. You do not want to miss this one!
