Arguably the most exciting of the new crop of distillers popping up around the Emerald Isle, Dingle makes shore with Batch 3 of their single malt, the first release stateside. The whiskies are made using traditional time tested methods with wooden mash tuns and fermenters, triple distillation run across their custom made copper pot stills, proofing with well water drawn on-site and non-chill filtration.

Defining small batch whiskey can sometimes blur the lines like natural wines do as it seemingly comes down to every distiller/winemaker to push forward their interpretation and criteria for the category. Dingle is a small town in County Kerry, Ireland and this is their whiskey, forged by independent artisans who wanted to recreate tradition and represent the terroir found in this small Southwestern Irish town.
Batch Number 3 is a marriage of bourbon and port casks that excellently highlight the soft fruit core of the new make as well as highlighting their pure well water and hand labored process. Wisps of warm vanilla, stewed apples, all spice and dark fruit concentrate on the nose while the palate is robust and lingers with flavors of Christmas cake, ginger snap, mulled cider and warming honey.
